Juicing Bush Cherries

Ken planted some bush cherries, called Nanking Cherries, that he got from the county Land Water Department.  Cherries are often listed as an alternative remedy for arthritis and gout!  With no side effects and as one of Ken’s favorite fruits we always have some juice on hand

Nanking cherries are a small fruit with large pit so I steam juice them and can the juice in quart jars for Ken

The steam juicer has proved invaluable for small fruit with big pits like the cherries and elderberries.  We also use it for over ripe apples, raspberries and currants.  It has a pot for water on the bottom

Above that is a pan to hold the juice with a small tube and clamp

Above that is a colander with a solid center.  The steam comes up through the colander and the juice drops to the pan below.  That juice goes through the tube and into my sterilized jars.

Voila – juice!
