I was looking for a new eggplant recipe and tried this. Slice and salt eggplant;
they will weep so you can absorb some moisture in a towel
Season some bread crumbs in a flat dish and beat an egg in a bowl
Dip the eggplant and bread
Fry in oil or fat that can take heat.
Place on a plate and keep in a warm oven until served. Top with a zesty pepper sauce or home made mayonnaise with a squeeze of lemon juice
