Greetings from the Garden! This week’s CSA box has lettuce, salad mix, braising greens, beets or carrots, asparagus, radishes, herbs, snap peas and strawberries
Field Notes. Ken has been vigilant about keeping the growing spaces cultivated. After the rain, once it is dry enough he is out with either the wheel hoe or hand cultivator.
He has also been planting – cabbage for fall is now in the garden. And he is weeding and mulching perennials like asparagus.
From the Kitchen. This week we move into more summer vegetables. I have used blanched snap peas in a pasta dish with dill, green onions, mustard and sour cream and canned salmon. And when I get some carrots I will cut the carrots in circle slices and cook them a few minutes then turn off heat and stir in the peas until they turn bright green. I usually add a bit of butter, salt and pepper.
I am also making jam from the blemishes strawberries, freezing strawberries for next winter and freezing asparagus for some cream of asparagus soup next winter and early spring
