Greetings from the Garden! this week’s CSA box has freshly dug potatoes, sweet potatoes, squash, leeks or red onions, garlic, salad and braising greens, winter tomatoes, and herbs.
Field Notes. The field is, unfortunately, too wet for Ken to use the tractor to dig the potatoes. So, he is digging some every day by hand. Today you get some freshly dug potatoes – when they taste best. And let us know what you think as we are taking part of some variety trials.
Ken has been mowing, planting green manure and harvesting.
Meanwhile I have started burying vegetables in sand in the root cellar
From the Kitchen. We have been baking sweet potatoes and squash. I have been making chicken soup. Ken has been making cream soup from the vegetables that have blemishes and we keep. Last Wednesday he made a leek, potato, carrot, and bell pepper soup – delicious!
And speaking of soup… On these damp, chilly mornings I have been sauteing an onion, adding chicken stock. Then I poach eggs in the soup and add greens just before serving. We have toast or rice on the side. This is something we learned in Japan: putting warm food in one’s stomach is a great way to start the day.
