Greetings from the Garden! This week’s CSA box has lettuce, greens, tomatoes, potatoes, peppers, eggplant, onions, garlic, beans cucumbers, celery, and fennel
Field Notes. Ken has been digging potatoes, harvesting tomatoes, peppers, etc. Plants are pushing that final leg of the marathon of the growing season. Enjoy all these hot weather vegetables now as some will end with first frost. We are heading into fall crops as well
Ken has been working on a smaller portable coop for the “tweens” as we call them. Those chickens are fully feathered but not old enough to enter the main flock. Ken has a few more tweaks before he finishes.
From the Kitchen. At Ken’s request I made tabbouleh. I looked at recipes on the internet and this one was simple: prepare 1/2 cup bulgur, add all the following: two medium tomatoes chopped, 1 small seedless cucumber chopped, 2 cups parsley chopped, 1/2 cup mint chopped, and 2 tablespoons olive oil. I also added juice from one lemon and some salt and pepper. Ken said it was good just the way it was. People who don’t eat wheat could substitute quinoa or another grain.
I also toasted some almonds in a skillet and served steamed green beans with butter and sliced almonds – also a hit. It was nice to enjoy these summer flavors before they are just a memory!
‘Til Next Week, Judith and the Gang
